Nibbles and Bits - Pupeyes

1 c. Oat flour
1 c. Brown rice flour 
½ c. Grated parmesan cheese
1 c. Tightly Packed Spinach leaves 
1 Egg
½ c. Water

Preheat oven to 350°. Puree spinach leaves in a food processor until smooth.
Combine all ingredients together and mix until a dough forms. Roll into small balls (about 1” in diameter) and place on an ungreased cookie sheet (they can be rather close together as they don’t spread while cooking).
Bake 20-25 minutes. Remove from oven and let cool completely on a wire rack. Store in an airtight container in the refrigerator.
